Organoleptic characteristics: Colour: deep, dark red with intense purple reflections. Smell: rich and complex. Notes of small black fruits such as blackberry and blueberry dominate, along with the characteristic hint of black pepper typical of the grape variety. Taste: warm, robust with great structure and dense, yet velvety tannins. It has a mineral flavor that recalls the proximity to the sea.

Pairings: First courses: busiate pasta with sausage and fennel ragù and spicy dishes.
Meats: spicy red meats, roast lamb and grilled meats, smoked cured meats.
Cheeses: very flavorful aged cheeses.
Serving temperature: 18° C

Winemaking

Fermentation with maceration of the grapes for 10 days at a temperature of 22°C to extract the maximum chromatic and aromatic potential. During fermentation, approximately 10% of the must is drained. Refinement for 30% of the product in French oak barriques for 5/6 months to round off the intensity of the tannin, the rest in steel for approximately 5/6 months.
