Winemaking

Destemming and crushing of the grapes and hyper-reduction vinification with cryomaceration at a temperature of 8°C for 16 hours. Static decantation and slow fermentation at 13°C for approximately 20 days. Aged in stainless steel for approximately 5-6 months to enhance softness and aromatic complexity.
