Organoleptic characteristics: Colour: intense ruby ​​red tending towards dark garnet with age. Smell: complex and enveloping. Hints of small black and red fruits such as raspberry, currant and morello cherry emerge intertwined with tertiary notes of vanilla, pepper and the typical hint of green pepper which however is very balanced in the Erice terroir. Taste: dry, structured and elegant. Well-defined and velvety tannins. It has a good persistence with a slightly toasted finish.

Winemaking

Destemming and crushing followed by fermentation of the must at 24°C for approximately 15 days for optimal extraction of tannins and colour. 30% of the product is aged in barrique for 5/6 months, the rest in steel for approximately 5/6 months.
